Rving and fine dining should go hand in hand! Many campers today are looking for healthy dishes that don't take a lot of prep area and will not leave you with leftovers. Since most rvs have limited storage in cabinets, countertops and in the refrigerator, cooking can sometimes be a mess of stacking stuff everywhere, washing to make more room or to reuse a needed dish and being frustrated by not having the right kitchen tools on hand. Combine a small prep area, with limited accessories, no dishwasher, and limited space for food and you need to be creative to have a healthy delicious dinner with minimal work and frustration. Summer months allow for grilling outdoors but what about those cold winter months?
One small item that takes up very little space but is very versatile is a small crock pot for two. You can place the meat of your choice topped with a variety of spices and then layer it with various vegetables and you have a one pot meal perfectly portioned with very little clean up. Using the crock pot also allows one to go spend the day elsewhere seeing area attractions while coming "home" to a dinner that is warm and ready to plate. The crock pot has varied settings which allow for varied cook times and is also good to not heat up the entire RV (a must in summer months). There are tons of crock pot websites and cook books (my personal favorite is Fix it and Forget it) and the possibilities are truly endless. You can not only make a main course and side dishes but even a decadent dessert or choose to have warm apple and raisin oatmeal for breakfast.
Cooking on the road does not mean compromising your standards for dinner. Even with limited space you can make a delicious meal with just a few basic ingredients and have the luxury of very little clean up!
